Fish… The boys don’t like it very much, although one more than the other. One is more adventurous with salmon or shrimp, the other keeps it at cod pieces… And let’s eat cod today, the same as in fish and chips! Prepared differently, but still.The

Let me start by saying that I do not like cauliflower as a vegetable. Just like broccoli… Cauliflower rice, on the other hand, is good to eat.
Cheese? Not a big fan, but melted, on a pizza, grilled sandwich or on an oven dish is great!

So when we were looking for recipes to eat healthier and tastier, this was the first one we came across.

The whole approach is and was:

  • We try it, is it tasty, we eat it more often.
  • is it “not so tasty”, I tweak it and if it is still not what we expected, it is skipped.

This dish is pretty simple, you need the following ingredients (my recipes are for 4-5 people):

  • Olive oil
  • 800 grams to 1 kilo minced meat (I used organic beef mince)
  • 800 grams cauliflower rice
  • 1 chopped onion
  • 2 bouillon cubes
  • 1 bulb mozzarella
  • 400 ml cooking cream
  • 2 eggs
  • 200 grams of grated cheese (30+)

Preparing takes about 15 minutes:
Fry the onions, add minced meat (flavour with a little bit of salt and pepper). When the minced meat is done, add cauliflower rice and cream, crumble the bouillon cubes and stir well. Bake for 2 minutes on medium heat.
Throw the entire content of the pan in an oven dish (30x24x8 cm), flatten slightly, place the mozzarella (sliced) over the dish and sprinkle the grated cheese on top.

Put in a preheated oven (200 degrees) for 20-30 minutes. Leave to cool of for 15 minutes before eating.
