Today is easy!Do not really cook, but more of a prepare meal. What do you need for 3 people: 2 avocados cut into cubes 1 head of iceberg lettuce 6 boiled eggs 3 Roma or meat tomatoes spring onions (to taste) – I use 1

Fish… The boys don’t like it very much, although one more than the other. One is more adventurous with salmon or shrimp, the other keeps it at cod pieces…

And let’s eat cod today, the same as in fish and chips! Prepared differently, but still.
The cod is really easy to prepare: dab dry, sprinkle with pepper and salt and fry it brown in a hot frying pan in about 5 minutes on each side with a good lump of butter. Put them aside on a plate and continue with the spaghetti!

Spread some olive oil in the same pan and fry the onion, then add the leek and pepper. Leave to stand high for a few minutes until the leeks soften well.

Now add the zucchini spaghetti, the raw (unsalted) cashew nuts and the cream cheese to the rest until the zucchini is al dente (about 1 to 2 minutes on high heat).

Divide the zucchini spaghetti over the plates and place the cod on top.

I had the cod sticking to the pan during the baking, hence it is in thousands of pieces on the picture on top of the spaghetti… But it was just as delicious!

Ingredients for 4 persons:

  • 600 grams of Cod
  • 3 zucchini (or for lazy people 200 grams of spaghetti per person)
  • 1 cup of cream cheese (Paturain or ValBlanc)
  • 2 to 3 stumps of leek
  • 1 large red pepper (cut into pieces and take out the seeds)
  • 4 to 5 spring onions
  • 1 big hand cashew nuts

Let me start by saying that I do not like cauliflower as a vegetable. Just like broccoli… Cauliflower rice, on the other hand, is good to eat.Cheese? Not a big fan, but melted, on a pizza, grilled sandwich or on an oven dish is great!

Happy New Year!!!!

A new category on my site that I will be blogging about on a regular base: What’s Cooking?

I usually do the cooking around here and I tend to end up with the same five dishes… Recognizable? So the entire family was in on it to spice things up and accept a challenge.

Since the start of 2021, I am cooking more healthy than before. Which in the end means: New Recipes!

So for every new dish I cook for my family (or friends, because behind my front door I get to invite as much people as I like), I will tell you what the ingredients are and show you a picture of the final result.

I do have to do some backdating on some of the posts, but in the end they will all appear in the correct order. BTW… with these dishes you get to loose weight without even noticing!!!

PS. we have a special New Years menu – we eat this every year, to have a good start.
