20 Minute Roasted Aubergine Curry

When you are the only 2 people in the house and you want to eat curry with aubergine🍆… So easy and really tasty, give it a try!
This is what you need to serve 2-3 persons
- 2 aubergine
- 3 tbsp curry powder (I used mild)
- olive oil
- 1 onion
- 3 garlic cloves
- 1/2 tsp turmeric
- 1 pinch chilli flakes
- 1 can chickpeas
- 1 can coconut milk (full fat)
- several large handful spinach
- juice 1 lime (3 drops Young Living Lime Essential Oil)
Just follow the recipe:
1️⃣ Firstly, slice the 2 aubergines into large pieces, adding to a baking tray. Drizzle olive oil over the aubergine pieces, as well as 2 tbsp curry powder, salt & pepper and shake until well coated. Place in the oven at 200C for 20 minutes
2️⃣ Finely dice the onion and garlic, adding both to a pan with olive oil to soften for 2-3 minutes
3️⃣ Add in 1 tbsp curry powder + 1/2 tsp turmeric + a pinch of chilli flakes and fry together for a minute
4️⃣ Drain the Chickpeas and add to the pan with the coconut milk, pinch salt & pepper and simmer for 7-8 minutes until it thickens
5️⃣ Finally, add in the spinach & lime, stir until the spinach wilts and then stir in the baked aubergine
FAQ’s:
➡️ Is it spicy? No! But if you like heat, add hotter curry powder or add in more chilli flakes
➡️ Can I double up on this recipe to make a batch? Absolutely, just double quantities
➡️ Can I freeze leftovers? Yes! Allow to cool and then freeze for another day
